Not that I heard of. For most astronomers (those with telescopes) the ships potential rolling would make it hard to do. Your object would keep drifting in and out of view.
However, there are several land based astronomy adventures you can partake on (depending on the depth of your budget).

If there are any, it better lands you on a terra firma, viewing stars with a telescope on a rocking boat would be a challenge to say the least.

The other problem is it sometimes gets cloudy out there due to the moisture. Where you really want to go is the middle of a big desert.
